4 whole wheat English muffins, split
3 Tablespoons Dijon mustard
8 thin silices low-fat ham
1 apple, peeled and cored
4 slices reduced-fat Swiss cheese, halved crosswise
1. Preheat the broiler. Arrange the muffin halves, cut side up, on a baking sheet. Broil for 1-2 minutes, or until the muffins are lightly browned. Remove from the broiler but do not remove from the baking sheet. Do not turn off the broiler.
2. Spread the mustard on the muffin halves. Top each with 1 slice of ham.
3. Slice the apple crosswise into 8 rings. Place the rings on the ham. Top with cheese.
4. Broil for 1-2 minutes, or until the cheese is melted.
Makes 8 open-faced sandwiches; 4 servings
Per Serving: 221 calories, 19 g protein, 27 g carbs, 4 g fat, 29 mg cholesterol, 843 mg sodium, 29 g fiber.
I like to use a crispy, juicy apple, such as Cortland, Pippin, or Granny Smith.
